Sho refers to elementary school.
Chu refers to junior high school.
Koh refers to high school.

The first site that came up on google, was this tattoo site,

Seifuku (制服) is actually just the general term for "uniform", typically applied to students (eg: school uniforms); of which seeraa-fuku (セーラー服) is a subset. In other words, most schools have uniforms that are not sailor uniforms in style, but are still called seifuku. Some schools have uniforms that are sailor uniforms in style, and can be called both seifuku and seeraa-fuku.

You can in fact use the term seifuku to describe the clothes you're required to wear for certain jobs (eg: the uniform for McDonalds, convenience stores, or various restaurant uniforms) -- but the term is seldom used in that way in the vernacular. In those cases, the loan-word yunifoomu (ユニフォーム, "uniform") is preferred.

My school's uniform is a sailor uniform desu.

Also worth mentioning that seifuku in modern times applies to junior high, high school, and kindergarten/pre-school kids. Most elementary schools don't require uniform (except for sports uniforms), and colleges vary on their uniform rules.

Additionally, sailor uniforms were popular in the past but have gone out of vogue recently, giving way to more "preppy" styles (eg white shirt, blazer and skirt). But some places are bringing them back.
