My favorites are:

Cowboy Bebop (very good one)

Maison Ikkoku (best Romance/Comedy Anime I've watched so far...and I watched quite a few; lovely characters)

Last Exil (Airships, Airplanes with some kind of futuristic-retro style, I really enjoyed that one)

Zeta Gundam (in my opinon the best Gundam series, SEED comes right after it)

Planetes (no fighting, no transformation...just a "realistic" story about garbage collectors in space and their dreams)

The Twelve Kingdoms and Full Metal Alchimist (both great Fantasy/Adventure Anime)

Rurouni Kenshin and Berserk would have been fantastic if they followed the manga...especially the last Kenshin saga was so great (when I was watching the anime I was hoping that the last Saga would start...but only fillers and then the end:constipation: I was really disappointed)

But thats a general Anime problem...mostly the manga is much better then the anime, like Love Hina or GTO to give a few more examples.

Serieses:
Gunbuster - Aim for the Top!
Dirty Pair
Kimagure Orange Road
FLCL
Azumanga Daioh

Movieses:
Voices of a Distant Star
Perfect Blue
The Iron Giant (yeah, I went there)
Beauty and the Beast (...twice)

Honorable Mention to Lodoss and Nuku Nuku, two great ideas that have yet to be given (completely) worthy executions. Also to Grave of the Fireflies, until such time as I develop the guts to actually watch it.

All-Time Classics:
-Love Hina (the one that got me hooked on internets!)
-Azumanga Daioh (one of the best ensemble shows)
-Cowboy Bebop (music by Yoko Kanno... nuff said)
-Gunslinger Girls (amazing detail in the settings. manga is deeper, 'tho.)

-Mai-Hime (pure fan service)
-2x2=Shinobu-den (fast paced laugh riot)
-Hanaukyo Maid (The original show. The ultimate harem show.)

Current Faves:
-Melancholy of Haruhi Suzumia (the English dub is very good so far.)
-Mai-Otome (pure fan service)

personally my all time favorite anime still stands as Ergo Proxy, it's dark theme with it's subtle message on humanity was quite intriguing.

2nd: Love Hina. Very cute story which centers around trying to determine if the protagonist is the luckiest or most cursed guy alive.
3rd: Cowboy Bebop? Haven't watched many anime in recent years though, this thread should come in handy.
