I think the universal safe word in the JAV industry is the English word "stop"(pronounced sutoppu in Japanese). The actors seem to immediately stop what they're doing whenever the actress says that.

Yeah they definitely use safe words. A couple examples where you can see "stop" being used: In the leaked uncensored video Fc2 PPV 1525602 at 14:55 they have the girl tied up pretty much just like that pic you showed and she says "stop" when it gets too intense and everyone stops what they're doing and the camera even turns away. Also in CESD-390 at 47:35 during an anal scene the guy is going a bit too hard so Yu Shinoda says "stop" and the guy immediately stops thrusting and then she asks him to pull it out and he does.
