my guess would be that it's becuase Japanese is a context heavy language with inflections. Not knowing the context like a human would might be why it gives you different results each time.
Surely that affects a lot, but it also happens with all languages. The AI does not translate literally, except for very short sentences, or set phrases like "How are you?" "Welcome home", and things like that.
It almost always changes the translation a bit even if you repeat the same text, it's like hiring different human translators... The meaning is the same but it uses synonymous words or expressions.
If you can't tell, does it matter?
